Lazy Summer Lemon Blues Cake

This one is a bit time consuming but worth every minute!

1 Duncan Hines Lemon cake mix

4 eggs

3/4 cup half & half

1 stick melted butter

2/3 cup sour cream

1 4oz box instant lemon pudding

2 1/2 cups fresh or frozen blueberries

Combine cake mix and dry pudding mix add eggs and beat til smooth

add half & half, butter,sour cream and mix well, batter will be very thick.

Gently fold in blueberries.

Pour into two round cake pans.  Bake at 350 degrees  for  40 – 50 min.

Cool in pans,  wrap in plastic and place in freezer til ready to frost.

 

SUMMERTIME LEMON CURD

2t Lemon Zest

2/3 cup fresh squeezed lemon juice

1cup granulated sugar

4T softened butter

2 whole eggs and 4 egg yolks

Use a double boiler.

Whisk together eggs and yolks, sugar and lemon juice.

Put butter in but do not stir

place on top of double boiler and let butter melt, stirring occasionally.

Once butter is melted stir continously about 15 min. until thickened.

Remove from heat and gently stir in lemon zest. Refrigerate at least

3 hours before using.

 

SUNNY LEMON BUTTERCREAM

1 cup softened butter

1/2 cup lemon zest

1/4 c fresh squeezed lemon juice

5 c powdered sugar

1/2 t vanilla extract

2T sweetened condensed milk

3T french vanilla coffee creamer (liquid)

 

put all ingredients in medium bowl and beat til smooth

Pipe some frosting around the top rim of the first layer so you have a type of barrier that will keep the lemon filling from oozing out the sides of the cake. (See above pic.)

Fill the middle with the Summertime Lemon Curd and place the top cake layer in place.

Carefully frost the sides and top with the Sunny Lemon Buttercream and garnish with a few blueberries.  Keep leftovers in refrigerator (if you have any!)

Secret Tips for Better Cakes

1: Look at the directions on the cake mix.
2: Add one more egg (or add 2 if you want it to be very rich).
3: Use melted butter instead of oil and double the amount.
4: Instead of water, use whole milk.
5: Mix well and bake for the time recommended on the box.

Do not under bake or over bake. the toothpick test works best.

 

Italian Pasta Salad

Begin with the Cucumber and Tomato Salad, I use the long green onions instead of slicing a whole sweet onion for this dish. You will need one whole bottle of Garlic Expressions.

Add about 1/2 cup diced ham or meat of your choice (pepperoni etc) sometimes I use both.

add 1 can of drained pitted black olives

about 1/3  of a whole, red, yellow and green pepper, diced. (all three kinds)

a bunch of green onions, thinly sliced (about 1/4 cup)

8 0z cubed mozzarella cheese

8 0z cubed colby/jack cheese

about 6-8 oz of your favorite pasta. I prefer shells. (cooked and drained)

toss drained and cooled pasta with about 1/4 cup parmesan cheese

Combine all and toss gently. This is one of those that gets better with age so you can make it the day before.  Want it extra special? Try adding some small cubes of pepper jack cheese, or a blended herb and garlic cheese.  Also, really goes over well at potlucks etc.!  You can easily double or triple the recipe and make a huge batch. Just remember to buy enough Garlic Expressions if you do! The sauce definitely makes this special!

Creamy Cucumber Salad

BLJOlKJOld fashioned goodness. My mom and granny used to make this.

peel and slice 4 large cucumbers. thinly slice 1 small  sweet onion. you can add tomatoes or not. sprinkle about 3 tablespoons granulated sugar over all. toss lightly and then add about 2 tablespoons apple cider vinegar and toss.  stir in about 1 cup (more or less to taste) miracle whip or mayo (your preference),  let this stand over night or at least for a few hours to form the wonderful sauce.

Garden Fresh Cucumber and Tomato Salad

tomato-cuke-onion-6855699Home grown goodness! This is easy to make ahead. You can make it the day before and keep it refrigerated. This is also the basis for my Italian Pasta Salad.

2 large tomatoes cut up or 1 pint of cherry tomatoes cut in half

3 large cucumbers or about 8-10 unpeeled small  pickling type cucumbers, sliced

1 medium size vidalia or sweet onion sliced into rings and cut the rings in half

combine all in a large bowl and sprinkle about 1 tablespoon granulated sugar over all and toss then add

1/2 bottle (it only comes in 1 size) Garlic Expressions salad dressing and marinade. (if you can’t find it google it, its made in perrysburg ohio)

toss together til thoroughly coated and sugar is dissolved. if you keep it overnight in refrigerator you can add more Garlic Expressions if necessary and toss it again.  But I normally have to add more of everything because it just doesn’t last in my house!

 

Granny Wendys Sugar Cookies

ImageThese are the big, soft, and puffy cookies you remember…………yum!!!

2C Sugar

1C shortening

2 eggs

1T vanilla

2t baking powder

1t baking soda

41/2 c all purpose flour

1 C buttermilk

Preheat oven to 375 degrees.

Combine dry ingredients and set aside.

Cream shortening and sugar til smooth.  Add eggs and beat with mixer. add vanilla.  Add four mixture (dry ingredients) a cup at at time, alternating with buttermilk until both dry and liquid are mixed. Dough will be slightly sticky.  Refrigerate dough for several hours, and then either roll out and cut or roll into balls. I roll into balls and coat balls with sugar, place on greased cookie sheet and flatten slightly.  Bake at 375 for 15 min ( length of time depends on size of cookie the smaller the cookie the less time needed).

This is by far the very best dip I have ever had! It has become a staple in my house.
Even my picky daughter, who refuses to eat beans of any kind no matter what, can’t stop
eating this stuff! Warning…….its addictive!

Cowboy Caviar

2- Lg Cans Petite diced tomatoes OR In season, about 8-10 large fresh tomatoes. diced

1- can Black beans drained and rinsed

1- can Black eyed peas

1- cans White shoe peg corn (Do not use regular canned corn)I use the bi-color corn on the cob when in season, one large ear is enough

1- Green peppers diced

1- med. Vidalia Onions diced

Diced Jalapeno peppers to taste (canned or fresh) I don’t use these. I like mine mild.

4 oz. Zesty Italian salad dressing any brand

Black pepper to taste

Mix together and serve with corn chips
